how can i change the default CD and or DVD applications to another
player by default? Windows Media Player keeps taking over the settings
and I would rather use Media Player Classic as the default player.

In WMP uncheck the unwanted file associations (WMP7 - Tools | Options |
Formats, WMP9 - Tools | Options | File Types) and then in Media Player
Classic associate the file types for which you wish to use this player
(Options | Player | Formats and check the appropriate boxes). Remember to
click Apply before exiting.

Go back again and make sure you have unchecked the relevant entries in
WMP. Also check Control Panel | Folder Options | File Types and look for
"Audio CD" in the File Types column. Select, click Advanced. You should
now see a list of "Actions" with one in Bold. The bold entry (which is
the default action) is probably Play and clicking Edit will tell you the
application used to perform the action. Look for the entry in Actions
placed there by Classic Media Player, highlight and then click Default.
The entry should now be bold.
Regrettably I can't check the entry in Win Me for DVD (it is DVDVideo in
XP so hopefully it is the same in Win Me) as I don't have a Win Me machine
available with a DVD player to allow me to check.
I still don't understand why WMP keeps reassociating itself as it isn't
doing that here for either my Win Me or XP systems.
