Vista has installed an update every day this week but it doesn't show up\
in the View Installed Updates list. The last update is shown as being
installed
10/31 and I know for a fact that Vista has been installing a single update
nearly
every day this week. Not sure of the KB number but I'm sure it didn't
install
today when Vista says it did. I get no error messages or anything.

You're not looking in the right PLACE!
Control Panel (Classic Mode) - Windows Update - View Update History.
