I am using Vista Ultimate and am having problems copying files from mounted
iso and .bin .cue files. Is this some sort of copy write protection?

Where are you trying to copy the files to? Do you get any error messages?
Are you using copy/paste or drag and drop?

I've tried copying it to me desktop, my C: drive, another data drive and to a
network resource.

I'm experiencing this issue while using the latest version of Daemon tools.
This issue is also present with Virtual CD.

Try WinRAR I also use it and it works extracting cd/dvd images or there
is PowerISO, MagicISO and WinISO. I cant remember the name for a tool
that is used to recover images, it works really well extracting files or
folders from any type of media...Just give WinRAR or PowerISO a try
wither of these should be able to mount/extract any files. It could be
the image you have is corrupted too.
