I've created a simple shape from a box and a line, grouped them and saved
them to the stencil.
Problem is, after they've been grouped I lose the ability to click into the
box to add or edit text. Am I doing something wrong?

Hello jc,
If you group two shapes a third shape is generated to contain them. You
should normally be able to sub select a shape within a group and then press
F2 to edit the text.
Another option might be to make your shape with the text your group shape.
To do this try the following:
1) Select your shape with the text and then from the menu bar - Shape /
Grouping / Convert to group
2) Now select both shapes and again from the menu bar - Shape / Grouping /
Add to group
This will result in a top level group shape that contains your text and you
can edit as normal.
