I accidentally hit the X on the Shapes Menu and deleted it on one of my Visio
drawings. How do I retrieve or replace that Menu?

Do you mean the Shape menu on the main menu bar?
I don't know what the official method is but I've found that this
works. Grab the menu bar with the mouse (grab it away from an actual
menu entry), it will detach and become a floating menu. But now there
will be a small black triangle at the right-hand end, click that and
eventually you will be presented with a menu called "menu Bar", follow
that and you will see a list of all the top level menus, with a tick
box by each on. When done just drop the menu bar back up at the top of
the screen.
If there is another way of doing this without floating the menu bar
then I'd really like to know about it.

There is an X on the Shapes bar that controls the display of the stencils, is
this what you are referring to? If this is the case you can simply select the
stencil from Shapes Icon button to restore the stencil.
