I need a list of all the different catagories i have created to give to my
assistant

Version of Outlook?
Outlook 2003 and older: Add them all to a contact, calendar or task then
copy and paste the list into a document or message. If the recipient needs
the list in their outlook, they paste it into the Add category dialog.

Outlook cannot print that list. You might use Category Manager for that.
