Is there a way we could use Microsoft Office Word to automatically assign a
pending status to items?

There's no such concept within Word itself. Probably some scheme could be
programmed with macros, but you'd have to be much more explicit about the
behavior you want.
What kind of "items" are you thinking of? Are there multiple "items" per
document? Where would you expect to view or set this status? What other statuses
would you need? When you say "automatically", what event would signal that some
item should be marked pending, and what event would change that to some other
status?
