I am trying to do exactly the same thing - please share with the steps you took to fix this! I also had this working in Outlook 2003.

My reason is that I have both corporate and personal email delivered to my computer, but I don't have Blackberry enterprise server, which means I can't sync exchange data with my Blackberry. When you add an Exchange account to Outlook, by default it totally takes over, and your default address books, calendar etc. are all the exchange one. You can still use your other ones, but things get very messy.

I would be eternally grateful for a solution. I have looked everywhere.

Just figured this out - it is really easy when you know how!

Add the Exchange account using the Mail control panel. Then start Outlook, Tools -> Options -> Mail Setup -> Data Files. Click on the Personal Folders or other PST that contains Outlook.pst. Set it as default. Restart Outlook (not sure if you need to restart, but seems safe thing to do). Voila! All is well.

The thing that eluded me is that you need to make this change from within Outlook, not from the Mail control panel.
